Pumpkin Spiced Muffins

These are a family favorite!

My kids ask for these regularly. They are great any time of year, but especially in the fall for all the pumpkin spice things!

Pumpkin Spiced Muffins

INGREDIENTS:

Dry Ingredients:

  • 1½ cups unbleached or 1:1 gluten-free flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • ¼ teaspoon sea salt

  • ½ teaspoon ground cinnamon

  • 2 teaspoons pumpkin spice

Wet Ingredients:

  • ¾ cup maple syrup

  • ¾ cup melted coconut oil or grass-fed butter

  • 1 teaspoon vanilla extract

  • 1 large egg

  • 1 (15 oz) can pumpkin or 2 cups fresh pumpkin puree

Mix-ins:

  • ½ cup bittersweet dark chocolate chips

  • ½ cup chopped pecans

Health Boost Options:

  • 1 tablespoon ground flaxseeds

  • 2 tablespoons unflavored collagen powder

INSTRUCTIONS:

  • Preheat oven to 350°F

  • In a large bowl, combine all dry ingredients

  • In a separate bowl, melt oil or butter, then whisk in maple syrup, egg, vanilla, and pumpkin puree until smooth

  • Fold wet ingredients into dry mixture until just combined

  • Gently fold in chocolate chips

  • Pour batter into greased muffin tins or use muffin liners (makes 12-18 muffins)

  • Bake for 20-25 minutes, or until a toothpick comes out clean
