Pumpkin Spiced Muffins

These are a family favorite!
My kids ask for these regularly. They are great any time of year, but especially in the fall for all the pumpkin spice things!

Pumpkin Spiced Muffins
INGREDIENTS:
Dry Ingredients:
1½ cups unbleached or 1:1 gluten-free flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon sea salt
½ teaspoon ground cinnamon
2 teaspoons pumpkin spice
Wet Ingredients:
¾ cup maple syrup
¾ cup melted coconut oil or grass-fed butter
1 teaspoon vanilla extract
1 large egg
1 (15 oz) can pumpkin or 2 cups fresh pumpkin puree
Mix-ins:
½ cup bittersweet dark chocolate chips
½ cup chopped pecans

1 tablespoon ground flaxseeds
2 tablespoons unflavored collagen powder
INSTRUCTIONS:
Preheat oven to 350°F
In a large bowl, combine all dry ingredients
In a separate bowl, melt oil or butter, then whisk in maple syrup, egg, vanilla, and pumpkin puree until smooth
Fold wet ingredients into dry mixture until just combined
Gently fold in chocolate chips
Pour batter into greased muffin tins or use muffin liners (makes 12-18 muffins)
Bake for 20-25 minutes, or until a toothpick comes out clean
