Superfood Chocolate Crunch Bars

A protein-packed treat the whole family will love!

This delicious snack covers it all: crunchy, chocolatey, and satisfies that sweet tooth! Made with sprouted brown rice crisps for added fiber, plus protein from nut butter and healthy fats from coconut oil, these bars are a nutritious alternative to traditional crispy treats. Best of all, they're simple to make with just one saucepan and minimal cleanup. Kids love helping with this recipe!

Superfood Chocolate Crunch Bars

INGREDIENTS:

Base Layer:

  • 1½ cups pure peanut butter (or any nut butter)*

  • ¼ cup  raw, local honey or pure maple syrup

  • 2 tablespoons ground flax seeds (optional)

  • 2 tablespoons unrefined coconut oil

  • 6 cups Sprouted Brown Rice Crisps (One Degree is the brand I use)

Chocolate Topping:

  • 1¼ cups bittersweet dark chocolate chips (65% cacao or higher)

  • 2 tablespoons unrefined coconut oil

INSTRUCTIONS:

Prepare the Base:

  1. In a saucepan over low heat, melt the peanut butter, honey, and 2 tablespoons coconut oil, stirring until smooth

  2. Remove from heat and add the ground flax seeds and Brown Rice Crisps, stirring until completely combined

  3. Line a 9x12-inch baking pan with parchment paper, leaving some overflow on the sides for easy removal (alternatively, spray or grease with coconut oil)

  4. Spread the crisp mixture evenly in the pan and press down firmly with your hands, thoroughly compacting the mixture (crunching sounds are normal!)

  5. In the same saucepan over low heat, combine chocolate chips and remaining 2 tablespoons coconut oil

  6. Stir constantly until mostly melted, then remove from heat and continue stirring until completely smooth

  7. Spread chocolate evenly over the crisp layer

  8. Refrigerate for at least 2 hours, or freeze for 30-45 minutes until firm

  9. Once set, lift the entire slab out using the parchment paper overhang

  10. Cut into squares and enjoy!

Store in an airtight container in the refrigerator for up to 1 week.

NOTES:

*Pure peanut butter contains only peanuts and salt—no hydrogenated oils or added sugars that can cause inflammation. Look for this cleaner option at most grocery stores or through Thrive Market.
