Oat Bars

These oat bars are delicious and easy to make!

You can eat them as a snack, for breakfast, and/or dessert. They are full of healthy fats and low in sugar. Any time I bring these to a potluck, I get asked for the recipe!

Oat Bars

INGREDIENTS:

  • 1 cup melted coconut oil, slightly cooled

  • 4 eggs

  • 1/2 cup 100% maple syrup

  • 2 teaspoons pure vanilla

  • 2 cups almond flour

  • 2 1/2 cups rolled oats

  • 2 teaspoons baking soda

  • 1 teaspoon cinnamon

  • 1 teaspoon sea salt

  • 1 tablespoon flax seeds

Optional:

  • 2 scoops unflavored collagen powder

  • 3/4 cups fresh blueberries or bittersweet, dark chocolate chips

  • 3/4 cup walnuts, chopped

  • 1/4 cup unsweetened shredded coconut

INSTRUCTIONS:

Preheat oven to 350.

  • Grease 9x11 pan with coconut oil

  • In a large bowl, whisk oil, eggs, syrup, and vanilla.

  • Add in dry ingredients and mix well.

  • Fold in the optional add ins, if desired.

  • Pour in pan and bake for 25 minutes.

  • Allow to cool for 10-15. Cut into bars.
