Chocolate Chip Pumpkin Muffins

These are a family favorite!
My kids ask for these regularly — and honestly, I don't mind one bit. They are great any time of year, but especially in the fall when all the pumpkin spice things come out.
What I love is that these are delicious and healthy. Pumpkin is a rich source of beta-carotene, which the body converts to vitamin A — essential for immune health, eye health, and healthy skin. It's also loaded with potassium, vitamin C, and fiber, making it one of those ingredients that feels indulgent but is genuinely nourishing.
I also add flax seeds for a boost of omega-3 fatty acids and extra fiber, and sometimes I stir in unflavored collagen for a little added protein and gut support.
This recipes makes the muffins moist and keeps everyone satisfied longer than your average treat. They also pair well with a really good cup of coffee!
Chocolate Chip Pumpkin Muffins
INGREDIENTS:
Dry Ingredients:
3 cups unbleached or 1:1 gluten-free flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon sea salt
2 teaspoon ground cinnamon
3 teaspoons pumpkin spice (here is my homemade recipe)
Wet Ingredients:
1 1/2 cup maple syrup
2/3 cup melted coconut oil or grass-fed butter
2 teaspoon vanilla extract
2 large eggs
2 (15 oz) can 100% pumpkin or 2 cups fresh pumpkin puree
Mix-ins:
½ - 1cup bittersweet dark chocolate chips
½ cup chopped pecans
Health Boost Options:
1 tablespoon ground flaxseeds
2 tablespoons unflavored collagen powder
INSTRUCTIONS:
Preheat oven to 350°F
In a large bowl, combine all dry ingredients
In a separate bowl, melt oil or butter, then whisk in maple syrup, egg, vanilla, and pumpkin puree until smooth
Fold wet ingredients into dry mixture until just combined
Gently fold in chocolate chips
Pour batter into greased muffin tins or use muffin liners (makes 2-3 dozen muffins)
Bake for 12-15 minutes, or until a toothpick comes out clean
