Crunchy Chickpea Salad

This is one of my favorite lunches!
This is like a tuna salad but lighter and plant-powered. This protein-packed crunchy chickpea salad is easy to make and full of flavor! Perfect for sandwiches, crackers, or eating straight from the bowl. You can add avocado or anything else you like. Ready in just 5 minutes with simple pantry ingredients.
Crunchy Chickpea Salad
INGREDIENTS:
1 (15 oz) can chickpeas, drained and rinsed
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
2-3 tablespoons finely diced red onion
2-3 tablespoons diced celery or red bell pepper
2-3 tablespoons diced dill pickle
2 teaspoons capers, drained and roughly chopped
Sea salt and freshly ground pepper to taste
Optional: 1 tablespoon fresh lemon juice for extra brightness
INSTRUCTIONS:
In a large bowl, lightly mash the chickpeas with a fork. (you can also leave some of them whole for texture)
Stir in mayonnaise and Dijon until well combined.
Fold in red onion, celery (or bell pepper), pickle, and capers.
Season with salt, pepper, and lemon juice if using.
Taste and adjust seasonings as needed.
Serve immediately on bread, with crackers, or over greens. Stores covered in fridge for up to 3 days.
